Lark Ruby Abyss No. 285 represents the super‑luxury tier of Lark Distillery’s single malt portfolio and is the most intense and indulgent expression in the range. This peated Tasmanian single malt is matured primarily in exceptionally old Seppeltsfield Tawny Port casks, some more than a century in age, alongside Lark’s signature fortified‑wine seasoned casks. The influence of these rare casks delivers immense depth, richness, and colour, while Tasmanian peat and applewood‑smoked water bring savoury balance to the whisky’s natural sweetness. Bottled at 43.8% ABV, Ruby Abyss is bold, layered, and contemplative, designed for slow sipping and serious whisky enthusiasts.

Tasting Notes

Nose
Rich and expressive, opening with pears steeped in aged dessert wine, dark stone fruit, and amber raisins. Caramelised sugar and dried figs follow, with hints of toasted macadamia, cocoa, and gentle earthy peat smoke.

Palate
Luxuriously textured and deeply flavoured, showing plum preserve folded through dark chocolate sauce and buttery pastry. Port sweetness and fortified richness dominate initially, balanced by savoury peat, spiced treacle, and subtle oak tannin as the whisky evolves.

Finish
Exceptionally long and warming, with lingering notes of spiced golden syrup, candied quince, old oak, and a savoury umami depth. Soft peat smoke and dark fruit persist well after the final sip.
